Juneberry Tofu omelette

Juneberries are one of my favorite fruits, like a slightly almond flavored, less acidic, red-purple blueberry. Juneberries make a great omelette, just make a blueberry omelette and substitute juneberries for the blueberries. Here's something a little more elaborate.

BTW, Juneberries act like blueberries in an omelette and the cooking brings out the almond flavor.

Juneberry Tofu omelette

  • 1/2 lb firm tofu, cut into 1/4 in cubes.
  • 2 eggs
  • 1 cup juneberries
  • 3 Tbsp. maple syrup
  • 1 Tbsp rice flour
Mix tofu, Juneberries, salt or tamari, and 1 tbsp. maple syrup. Add rice flour, and toss well. Add eggs and mix well. Pour batter into a well greased, hot griddle or frying pan. Smooth the batter out to a uniform 1/4 in. thickness and cook like a pancake till golden brown on both sides. Drizzle remaining 2 tbsp. maple syrup over the omelette and serve immediately. Serves 2.
