Balsamic-Maple Vinaigrette

A fast, hearty vinaigrette; A smooth and zesty marinade.

  • 2 cloves garlic, minced
  • 1 tbsp. chopped onion
  • 1/2 cup extra virgin olive oil
  • juice of 1/4 fresh lime
  • 3 tbsp. balsamic vinegar
  • 2 tsp. maple syrup
  • 3/4 tsp salt

Macerate the garlic in 2 tbsp. of the olive oil. add the other ingredients, put it all in a jar and shake vigorously. This dressing goes very well with a late-summer salad of mesclun and fresh tomatoes.
