Pink Pollack



An easy, creamy, low-fat fish dish. If you have ready-made salsa on hand, it's incredibly quick to prepare.

  • 1 lb. pollack
  • 1 scallion, chopped
  • 1/2 cup chunky salsa (mild to hot, depending on your taste)
  • 3/4 cup fresh cilantro or flat-leaf (Italian) parsely, chopped
  • 2 Tbsp. fresh basil, chopped
  • 1/2 yogurt

Mix the sauce ingredients together. Place the fish in coverable baking dish- corningware, glass, or enamel. top the fish wity the sauce, cover the dish, and bake at 350 F. till the fish is cooked. Serve with baked potato or rice and something green- salad or vegetable.
