Black and Red Salad



A dark, beautiful rice salad with black beans, fresh tomatoes and pinoli.

  • 3 cups cooked brown rice
  • 1 pint (or 1 can) cooked black beans
  • 1/4 cup toasted pinoli (pine nuts)
  • 1/4 cup sunflower seeds
  • 1/4-1/2 cup cut corn (from about 3 ears)
  • 1/4 cup parsely, chopped
  • 1 large, vine-ripened tomato
  • 2 scallions, chopped
  • 3 Tbsp. extra virgin olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 2 cloves fresh garlic, chopped very fine
  • 2 tsp. vegetarian "chicken" broth powder
  • 1 tsp. thyme
  • 3 tbsp. fresh basil, chopped
  • Salt and freshly ground pepper to taste

Mix all ingredients together, pack it in the picnic basket, and go!
