Beach-grilled Tofu



A simple, smokey, delicious, protein-rich picnic food. And a satisfying vegetarian solution for that summertime, grilled-meat craving.

  • 1 lb. tofu, drained and sliced into 3/8 in. slices
  • 2 sweet, red bell peppers, sliced into 1/2 inch rings
  • 1 large onion, sliced into 1/2 inch rings

    Marinade:

  • 2 cloves garlic, minced
  • 1 tbsp. chopped onion
  • 1/8 cup extra virgin olive oil
  • juice of 1 fresh lime
  • 1 tbsp. balsamic vinegar
  • 2 tsp. maple syrup
  • 3 tbsp tamari soy sauce

First, make the marinade. Macerate the garlic in 2 tbsp. of the olive oil. add the other ingredients (except the tofu), put it all in a jar and shake vigorously. Place the tofu in a container with a tight-fitting lid. Pour the marinade over the tofu, cover, pack it in to the picnic basket, along with the Beach Grill and head for the beach.

When you're ready to cook, start by grilling the onions and peppers. Then, as the fire produces more coals, lay the marinated, sliced tofu on the grill, brown each side lightly, and serve immediately- on rolls or with side dishes.
