Sunny Tofu Salad



A bright, summery, protein and calcium-rich salad made with tofu and a touch of curry.

Slice tofu into 1 in. squares, drain, and gently squeeze out any excess water. Crumble the tofu into a bowl, add the other ingredients, and use like egg salad- as a side dish, on sandwiches, etc.
