With fresh herbs and vine-ripened tomatoes from the garden, this is the quintessential summer salad and it's fast and easy too!

Bring the water to a boil. Stir in bulghur. Cover tightly and remove from heat. Let it sit 15 minutes. Add the rest of the ingredients and toss thoroughly. Serve as is or chilled.
